Ingredients

  • 1 cup shredded coconut
  • 1/4 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup dark chocolate chips
  • 1/4 cup whole almonds

Instructions

  1. Gather all your ingredients and measure them out.
  2. In a bowl, mix the shredded coconut, almond butter, honey or maple syrup, vanilla extract, and salt until everything is well blended.
  3. Form the mixture into small bars or clusters and place them on a baking sheet lined with parchment paper. Press a whole almond into the center of each bar.
  4. Freeze the bars for about 30 minutes to harden.
  5. Melt the dark chocolate chips in a microwave or double boiler until smooth.
  6. Dip each coconut bar into the melted chocolate, ensuring they are coated evenly.
  7. Return the chocolate-covered bars to the parchment-lined sheet and allow the chocolate to set.
  8. Store the finished Almond Joys in an airtight container in the refrigerator.
