- 2 cups cottage cheese
- 2 cups all-purpose flour
- 1/2 cup sugar
- 1/2 cup melted butter
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 cup brown sugar
- 1 tablespoon cinnamon (for filling)
- 1/4 cup milk (for glaze)
- 1 cup powdered sugar (for glaze)
Instructions
- Preheat your oven to 350°F (175°C). Grease a bread loaf pan to prevent sticking.
- In a mixing bowl, combine the cottage cheese, sugar, melted butter, eggs, and vanilla extract. Mix until well blended and creamy.
- In another bowl, whisk together the flour, baking powder, cinnamon, and salt. Gradually add these dry ingredients to the wet mixture, stirring until just combined.
- In a small bowl, mix together the brown sugar and cinnamon for the filling. Spread half of the batter into the greased loaf pan. Then, sprinkle the cinnamon-sugar mixture over the batter. Carefully pour the remaining batter on top and gently swirl it with a knife to create a marbled effect.
- Bake in the preheated oven for 45-50 minutes or until a toothpick inserted in the center comes out clean.
- Once baked, allow the bread to cool. For the glaze, whisk together the milk and powdered sugar until smooth. Drizzle this over the cooled bread before serving.
