High Protein Banana Muffins

Description

Delicious and nutritious muffins packed with protein from Greek yogurt and protein powder, perfect for breakfast or a snack.


Ingredients

  • 3 ripe bananas, mashed
  • 1 cup oats
  • 1 scoop protein powder
  • 1 cup Greek yogurt
  • 1/4 cup honey or maple syrup
  • 2 large eggs
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • Optional: chopped nuts, chocolate chips, or dried fruit

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with liners or grease the cups.
  2. Mash the ripe bananas in a large bowl until smooth. Add oats, protein powder, Greek yogurt, honey or maple syrup, eggs, baking soda, baking powder, vanilla extract, and salt. Mix until combined.
  3. If adding optional ingredients, fold them into the batter gently. Divide the batter among the muffin cups, filling each 2/3 full. Bake for 18-22 minutes, or until a toothpick inserted comes out clean.
  4. Let the muffins cool in the tin for a few minutes, then transfer to a wire rack to cool completely.

Notes

Store muffins in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
