Ingredients

  • 4 cups cooked rice
  • 2 tablespoons vegetable oil
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 3 green onions, chopped
  • 2 eggs
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the mixed vegetables and sauté for 2-3 minutes until they are tender.
  3. Push the vegetables to one side of the skillet and crack the eggs into the empty side. Scramble the eggs until fully cooked.
  4. Add the cooked rice to the skillet, mixing it with the vegetables and eggs.
  5. Pour the soy sauce and sesame oil over the rice, stirring to combine.
  6. Season with salt and pepper to taste.
  7. Stir in the chopped green onions and serve hot.

Notes
