Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 carrots, diced
  • 1 pound ground turkey
  • 1 zucchini, diced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt, to taste
  • Pepper, to taste
  • 1 can crushed tomatoes
  • 1 can kidney beans, drained
  • 1 can black beans, drained
  • 2 cups vegetable broth
  • Fresh cilantro, for garnish (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, garlic, bell pepper, and carrots; sauté for 5 minutes.
  2. Add ground turkey and cook until browned, breaking it apart as it cooks.
  3. Stir in zucchini, chili powder, cumin, salt, and pepper; cook for an additional 2 minutes.
  4. Add crushed tomatoes, kidney beans, black beans, and vegetable broth. Stir and bring to a gentle simmer.
  5. Reduce the heat, cover, and let it cook for 25-30 minutes, stirring occasionally. Adjust seasoning before serving.

Notes

Great served on its own or with toppings like shredded cheese or sour cream. Pairs well with cornbread or brown rice.
