Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 pound ground beef
- 1 pound ground pork
- 1 can (15 oz) kidney beans, drained
- 1 can (14.5 oz) diced tomatoes
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- Salt to taste
- Pepper to taste
- 2 cups beef broth
- 1 bell pepper, chopped
- 1 cup corn (optional)
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add chopped onion and minced garlic, sauté until the onions are soft and translucent.
- Stir in ground beef and ground pork, cooking until well browned.
- Add kidney beans, diced tomatoes, chili powder, cumin, salt, and pepper, stirring to combine.
- Pour in beef broth and add chopped bell pepper.
- Bring the mixture to a boil, then reduce heat and simmer for about 30 minutes.
- If adding corn, toss it in during the last 5 minutes of cooking.
- Serve hot, garnished with your favorite toppings.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. It can be frozen for up to 3 months.
