Description

A comforting chili packed with savory meats and a variety of beans, perfect for chilly evenings or gatherings.


Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 pound ground beef
  • 1 pound ground pork
  • 1 can (15 oz) kidney beans, drained
  • 1 can (14.5 oz) diced tomatoes
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • Salt to taste
  • Pepper to taste
  • 2 cups beef broth
  • 1 bell pepper, chopped
  • 1 cup corn (optional)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic, sauté until the onions are soft and translucent.
  3. Stir in ground beef and ground pork, cooking until well browned.
  4. Add kidney beans, diced tomatoes, chili powder, cumin, salt, and pepper, stirring to combine.
  5. Pour in beef broth and add chopped bell pepper.
  6. Bring the mixture to a boil, then reduce heat and simmer for about 30 minutes.
  7. If adding corn, toss it in during the last 5 minutes of cooking.
  8. Serve hot, garnished with your favorite toppings.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. It can be frozen for up to 3 months.
