- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 4 cups chicken broth
- 1 tablespoon Cajun seasoning
- 1 teaspoon paprika
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic and cook until the onion turns translucent.
- Stir in the shredded chicken, white beans, corn, chicken broth, Cajun seasoning, and paprika.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 20-30 minutes.
- Season the chili with salt and pepper to taste. Serve hot, garnished with chopped green onions.
