Description

A delightful and nutritious zucchini bread that combines moist zucchini with wholesome ingredients, perfect for breakfast, a snack, or dessert.


Ingredients

  • 2 cups grated zucchini
  • 1 cup whole wheat flour
  • 1/2 cup almond flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup honey or maple syrup
  • 1/4 cup olive oil
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 cup chopped nuts or chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a loaf pan with olive oil or line it with parchment paper.
  2. In a large bowl, combine the grated zucchini, honey (or maple syrup), olive oil, vanilla extract, and eggs, stirring until well combined.
  3. In another bowl, whisk together the whole wheat flour, almond flour, baking soda, baking powder, salt, and cinnamon.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined, folding in nuts or chocolate chips if desired.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
