- 2 cups grated zucchini
- 1 cup whole wheat flour
- 1/2 cup almond flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 cup honey or maple syrup
- 1/4 cup olive oil
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/2 cup chopped nuts or chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease a loaf pan with olive oil or line it with parchment paper.
- In a large bowl, combine the grated zucchini, honey (or maple syrup), olive oil, vanilla extract, and eggs, stirring until well combined.
- In another bowl, whisk together the whole wheat flour, almond flour, baking soda, baking powder, salt, and cinnamon.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined, folding in nuts or chocolate chips if desired.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
