- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 can diced tomatoes
- 2 cups fresh spinach
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until softened and fragrant, about 3-4 minutes.
- Pour in the vegetable broth and add the diced tomatoes. Bring the mixture to a rolling boil.
- Stir in the tortellini and Italian seasoning, reduce heat to medium-low, and let it simmer according to package instructions, usually around 5-7 minutes.
- Add the fresh spinach in the last few minutes of cooking, stirring until just wilted. Season with salt and pepper to taste. Serve hot, topped with grated Parmesan cheese.
