Ingredients

  • 1 package of tortellini
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 2 cups fresh spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until softened and fragrant, about 3-4 minutes.
  2. Pour in the vegetable broth and add the diced tomatoes. Bring the mixture to a rolling boil.
  3. Stir in the tortellini and Italian seasoning, reduce heat to medium-low, and let it simmer according to package instructions, usually around 5-7 minutes.
  4. Add the fresh spinach in the last few minutes of cooking, stirring until just wilted. Season with salt and pepper to taste. Serve hot, topped with grated Parmesan cheese.
