Description

Delightful pastries made using sourdough starter, featuring a cheesy filling and a fluffy exterior, perfect for breakfast or snacks.


Ingredients

  • 120g all-purpose einkorn flour
  • 105g whole grain spelt flour
  • 1 teaspoon sea salt
  • 1/2 cup milk
  • 5 tablespoons unsalted butter, melted
  • 3 tablespoons white sugar
  • 1 large egg
  • 1 large egg yolk
  • 1/4 cup active sourdough starter
  • 6 ounces softened cream cheese
  • 1/4 cup white sugar
  • 1 1/2 teaspoons all-purpose flour
  • 1/4 teaspoon pure vanilla essence
  • A pinch of salt
  • 12 teaspoons fresh lemon juice
  • 1 tablespoon plus 1 teaspoon all-purpose flour
  • 1 tablespoon plus 1 teaspoon white sugar
  • 1/2 tablespoon unsalted butter, chilled and cut into pieces

Instructions

  1. Combine all-purpose einkorn flour, spelt flour, sea salt, melted butter, milk, sugar, egg, and sourdough starter in a mixing bowl until a soft dough forms. Knead the dough gently until it comes together smoothly.
  2. Let the dough rise in a greased bowl covered with a towel for about 30 minutes.
  3. Prepare the filling by mixing cream cheese, 1/4 cup of sugar, 1 1/2 teaspoons of all-purpose flour, vanilla essence, and a pinch of salt until smooth.
  4. Add lemon juice for a bright, tangy flavor if desired.
  5. Preheat the oven to 350°F (175°C). Roll out the dough to ½ inch thick and cut into squares or circles.
  6. Place about one tablespoon of filling in the center of each piece, then fold or pinch closed.
  7. Bake on a parchment-lined baking sheet for about 20 minutes until golden brown.

Notes

Serve warm, dusted with powdered sugar, and pair with coffee or tea. Store in an airtight container for up to 2 days, refrigerate for up to a week, or freeze for up to 3 months.
