Ingredients

  • 1/2 cup nut butter (such as almond or peanut butter)
  • 1/4 cup honey or maple syrup
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup shredded coconut (optional)
  • 1/2 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. In a mixing bowl, combine oats, nut butter, honey (or maple syrup), cocoa powder, shredded coconut (if using), vanilla extract, and salt. Stir well until all ingredients are mixed thoroughly.
  2. Use your hands or a spoon to form small cookies from the mixture, pressing them together to hold their shape.
  3. Place the cookies onto a parchment-lined baking sheet. This will ensure they don’t stick and makes for easier handling later.
  4. Refrigerate for at least 30 minutes until set. Once firm, your healthy no bake cookies are ready to enjoy!
