Description

A quick and delicious treat that combines wholesome ingredients to create a satisfying no-bake cookie, perfect for any occasion.


Ingredients

Scale
  • 1 cup oats
  • 1/2 cup nut butter (e.g. almond or peanut)
  • 1/4 cup honey or maple syrup
  • 1/4 cup cocoa powder
  • 1/4 cup dark chocolate chips (optional)
  • 1/4 cup shredded coconut (optional)
  • 1 tsp vanilla extract
  • A pinch of salt

Instructions

  1. In a mixing bowl, combine the nut butter, honey (or maple syrup), cocoa powder, vanilla extract, and a pinch of salt.
  2. Mix until well combined and you have a smooth consistency.
  3. Stir in the oats, and fold in the chocolate chips and shredded coconut if desired.
  4. Scoop tablespoon-sized portions onto a lined baking sheet. Press down slightly on each cookie and refrigerate for at least 30 minutes to firm up before serving.

Notes

Store in an airtight container in the refrigerator for up to one week, or freeze for longer storage.
