Description

A delightful alternative to traditional fried chicken, these baked chicken thighs boast a crispy exterior while keeping the meat tender and juicy.

Ingredients

Scale
  • 4 bone-in chicken thighs
  • 1 cup whole wheat or gluten-free breadcrumbs
  • 1/2 cup whole wheat or almond flour
  • 2 eggs
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C). Pat the chicken thighs dry and season them generously with salt, pepper, paprika, and garlic powder.
  2. Prepare a breading station with three bowls: one with flour, one with beaten eggs, and another with breadcrumbs.
  3. Dredge each chicken thigh in flour, dip in the beaten eggs, then coat with breadcrumbs, pressing gently to adhere.
  4. Place the breaded chicken thighs on a baking sheet, drizzle with olive oil, and bake for 30-35 minutes until golden and crispy.

Notes

For extra crispiness, spray chicken with cooking spray before baking. Experiment with spices for a unique twist.
