- 1 cup cottage cheese
- 1 cup rolled oats
- 1/2 cup whole wheat flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 eggs
- 2 tablespoons honey or maple syrup
- 1/4 cup milk
- Optional: seeds or nuts for topping
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a mixing bowl, combine the cottage cheese, rolled oats, whole wheat flour, baking powder, baking soda, and salt. Stir until well-blended.
- In another bowl, whisk together the eggs, honey or maple syrup, and milk until smooth.
- Pour the wet ingredients into the dry ingredients and gently mix until just combined, avoiding over-mixing.
- Pour the batter into the greased loaf pan and sprinkle seeds or nuts on top if desired. Bake for 40-45 minutes until a toothpick inserted comes out clean.
- Allow the bread to cool in the pan for a few minutes before transferring it to a wire rack.
Notes
Make sure your cottage cheese is well-drained for the best texture. For a sweeter bread, increase honey or maple syrup. Experiment with different toppings.
