Ingredients

  • 1 cup cottage cheese
  • 1 cup rolled oats
  • 1/2 cup whole wheat flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs
  • 2 tablespoons honey or maple syrup
  • 1/4 cup milk
  • Optional: seeds or nuts for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, combine the cottage cheese, rolled oats, whole wheat flour, baking powder, baking soda, and salt. Stir until well-blended.
  3. In another bowl, whisk together the eggs, honey or maple syrup, and milk until smooth.
  4. Pour the wet ingredients into the dry ingredients and gently mix until just combined, avoiding over-mixing.
  5. Pour the batter into the greased loaf pan and sprinkle seeds or nuts on top if desired. Bake for 40-45 minutes until a toothpick inserted comes out clean.
  6. Allow the bread to cool in the pan for a few minutes before transferring it to a wire rack.

Notes

Make sure your cottage cheese is well-drained for the best texture. For a sweeter bread, increase honey or maple syrup. Experiment with different toppings.
