Ingredients

- 1 cup whole wheat flour
- 1/2 cup cocoa powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup honey or maple syrup
- 1/3 cup unsweetened applesauce
- 2 eggs
- 1 tsp vanilla extract
- 1/2 cup dark chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the whole wheat flour, cocoa powder, baking powder, baking soda, and salt until well blended.
- In another bowl, beat together the honey (or maple syrup), unsweetened applesauce, eggs, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and mix gently until just combined. Fold in dark chocolate chips if using.
- Divide the batter evenly among the muffin cups, filling each about two-thirds full.
- Bake for 15-18 minutes or until a toothpick inserted comes out clean.
- Allow the muffins to cool for a few minutes in the tin before transferring to a wire rack to cool completely.

Store in an airtight container for up to 3 days or freeze for up to three months.
