Description

Deliciously rich muffins that combine chocolate with wholesome ingredients for a guilt-free treat.


Ingredients

  • 1 cup whole wheat flour
  • 1/2 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup honey or maple syrup
  • 1/3 cup unsweetened applesauce
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup dark chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the whole wheat flour, cocoa powder, baking powder, baking soda, and salt until well blended.
  3. In another bowl, beat together the honey (or maple syrup), unsweetened applesauce, eggs, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix gently until just combined. Fold in dark chocolate chips if using.
  5. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  6. Bake for 15-18 minutes or until a toothpick inserted comes out clean.
  7. Allow the muffins to cool for a few minutes in the tin before transferring to a wire rack to cool completely.

Store in an airtight container for up to 3 days or freeze for up to three months.
