Ingredients

  • 1 chicken breast, grilled and sliced
  • 1 medium sweet potato, diced and roasted
  • 1 cup broccoli florets, steamed
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon paprika
  • Optional toppings: avocado, sesame seeds, or your favorite sauce

Instructions

  1. Preheat the oven to 425°F (220°C). Toss the diced sweet potato in a bowl with olive oil, salt, pepper, and paprika. Spread them out evenly on a baking sheet and roast for about 20-25 minutes, or until tender and slightly caramelized.
  2. While the sweet potatoes are roasting, grill or pan-cook the chicken breast until it reaches an internal temperature of 165°F (75°C) and is no longer pink inside. This usually takes about 6-8 minutes per side, depending on the thickness of the chicken.
  3. In a bowl, layer the cooked rice at the bottom. Next, add the roasted sweet potatoes, sliced chicken, and steamed broccoli florets on top.
  4. Add optional toppings such as sliced avocado or sesame seeds, if desired. Drizzle with your favorite sauce for an extra burst of flavor. Serve warm and enjoy your healthy meal!
