- 2 cups rolled oats
- 1 cup grated carrots
- 1/2 cup chopped walnuts
- 1/4 cup raisins
- 1/2 cup honey or maple syrup
- 1/4 cup almond butter
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
- In a large bowl, combine rolled oats, grated carrots, chopped walnuts, raisins, cinnamon, nutmeg, and salt.
- In another bowl, mix honey (or maple syrup), almond butter, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and mix until well combined.
- Pour the mixture into the prepared baking dish and press down firmly. Bake for 25-30 minutes or until golden brown.
- Allow to cool completely before cutting into bars.
- Store in an airtight container.
Notes
For added sweetness, consider mixing in chopped dates or coconut flakes. Can be customized with nuts or dried fruits.
