Nutritious bites that pack all the flavors of carrot cake into a convenient snack, perfect for on-the-go energy.


Ingredients

  • 2 cups rolled oats
  • 1 cup grated carrots
  • 1/2 cup chopped walnuts
  • 1/4 cup raisins
  • 1/2 cup honey or maple syrup
  • 1/4 cup almond butter
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
  2. In a large bowl, combine rolled oats, grated carrots, chopped walnuts, raisins, cinnamon, nutmeg, and salt.
  3. In another bowl, mix honey (or maple syrup), almond butter, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until well combined.
  5. Pour the mixture into the prepared baking dish and press down firmly. Bake for 25-30 minutes or until golden brown.
  6. Allow to cool completely before cutting into bars.
  7. Store in an airtight container.

Notes

For added sweetness, consider mixing in chopped dates or coconut flakes. Can be customized with nuts or dried fruits.
