Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 2 cups chicken broth
  • 1 cup buffalo sauce
  • 1 cup corn (frozen or canned)
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Chopped green onions and cilantro for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and cook until softened, about 5 minutes. Stir in garlic and cook for another minute.
  2. Add chicken breasts to the pot, followed by the buffalo sauce, chicken broth, beans, corn, chili powder, cumin, salt, and pepper. Stir everything together until well combined.
  3. Bring the mixture to a boil, then reduce heat and simmer for 20-25 minutes, or until the chicken is thoroughly cooked.
  4. Remove the chicken, shred it with two forks, and return it to the pot. Stir well to combine. Serve hot, garnished with chopped green onions and fresh cilantro.

Notes

Can be stored in an airtight container in the refrigerator for up to 4 days or frozen for up to 3 months. For a creamy version, stir in cream cheese or Greek yogurt at the end.
