These Healthy Breakfast Cookies are a nutritious alternative to sugary snacks, packed with wholesome ingredients for a delightful morning boost.


Ingredients

  • 1 cup oats
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1 banana, mashed
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon baking soda
  • 1/2 cup chopped nuts or seeds
  • 1/2 cup dried fruit or chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mash the banana until smooth, then mix in the almond butter, honey (or maple syrup), and vanilla extract until creamy.
  3. Stir in the oats and baking soda, followed by the chopped nuts or seeds and any dried fruit or chocolate chips.
  4. Drop spoonfuls of dough onto the baking sheet, flattening slightly. Bake for 10-12 minutes until edges are golden.
  5. Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes
