Description

Delightful pancakes made with ripe bananas, yogurt, and a hint of cinnamon for a healthy breakfast treat.


Ingredients

  • 1 ripe banana
  • 1 cup plain yogurt
  • 1 cup all-purpose flour
  • 1 egg
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • 1/4 cup milk
  • 1 tbsp honey or maple syrup (optional)
  • Salt to taste

Instructions

  1. Mash the ripe banana until smooth.
  2. Add yogurt, the egg, milk, and vanilla extract. Mix until well combined.
  3. Combine the flour, baking powder, ground cinnamon, and a pinch of salt in another bowl.
  4. Gradually stir the dry ingredients into the wet mixture until just combined.
  5. Heat a non-stick skillet and pour about 1/4 cup of batter for each pancake.
  6. Cook until small bubbles form, then flip and cook until golden brown.
  7. Serve warm, drizzled with honey or maple syrup if desired.

Notes

Use very ripe bananas for optimal sweetness. Greek yogurt can thicken the batter and add more protein.
