Ingredients

  • 1 lb ground chicken
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 cups chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Optional toppings: sour cream, shredded cheese, green onions

Instructions

  1. In a large pot, brown the ground chicken over medium heat for about 5-7 minutes, breaking it apart with a wooden spoon.
  2. Add the chopped onion and minced garlic to the pot, cooking for an additional 3-4 minutes until the onion is translucent.
  3. Stir in the diced tomatoes, kidney beans, black beans, and chicken broth. Add chili powder, cumin, salt, and pepper, mixing well.
  4. Bring to a boil, then reduce heat to low and simmer for about 20-30 minutes, allowing flavors to meld.

Notes

For extra flavor, consider using crushed tomatoes or tomato sauce instead of diced tomatoes. Adjust spice levels by adding jalapeños or hot sauce.
