- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (10 oz) enchilada sauce
- 1 cup salsa
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 2 cups cooked rice
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onion and minced garlic. Cook until soft and fragrant, about 2-3 minutes.
- Add the ground beef, breaking it apart as it cooks, for about 5-7 minutes. Drain excess fat.
- Stir in the enchilada sauce, salsa, black beans, corn, and cooked rice. Mix well and let simmer for 5-10 minutes. Top with shredded cheese, cover, and heat until melted.
Notes
Can customize with different proteins or veggies. Serve with warm tortillas, sour cream, or avocado.
