Description

A hearty one-pan meal bringing the rich flavors of enchiladas without the fuss, packed with ground beef, beans, corn, rice, and melty cheese.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (10 oz) enchilada sauce
  • 1 cup salsa
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 2 cups cooked rice
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and minced garlic. Cook until soft and fragrant, about 2-3 minutes.
  3. Add the ground beef, breaking it apart as it cooks, for about 5-7 minutes. Drain excess fat.
  4. Stir in the enchilada sauce, salsa, black beans, corn, and cooked rice. Mix well and let simmer for 5-10 minutes. Top with shredded cheese, cover, and heat until melted.

Notes

Can customize with different proteins or veggies. Serve with warm tortillas, sour cream, or avocado.
