Description

The perfect comfort food for busy weeknights, this one-pot dish combines ground beef, black beans, cheese, and enchilada sauce into a flavorful skillet meal.


Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) enchilada sauce
  • 1 cup corn kernels (fresh or frozen)
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

Instructions

  1. In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  2. Add the diced onion and minced garlic to the skillet and sauté until the onion becomes translucent, about 3-4 minutes.
  3. Stir in the black beans, corn, chili powder, cumin, salt, and pepper. Let heat through for about 5 minutes.
  4. Pour in the enchilada sauce and mix well. Sprinkle the shredded cheese on top, cover, and cook for another 3-5 minutes until the cheese is melted and bubbly.

Notes

Serve hot with a dollop of sour cream or guacamole. Pairs well with tortilla chips and a fresh salad. Leftovers can be refrigerated for up to 3 days.
