- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) enchilada sauce
- 1 cup corn kernels (fresh or frozen)
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- Chopped cilantro for garnish (optional)
Instructions
- In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add the diced onion and minced garlic to the skillet and sauté until the onion becomes translucent, about 3-4 minutes.
- Stir in the black beans, corn, chili powder, cumin, salt, and pepper. Let heat through for about 5 minutes.
- Pour in the enchilada sauce and mix well. Sprinkle the shredded cheese on top, cover, and cook for another 3-5 minutes until the cheese is melted and bubbly.
Notes
Serve hot with a dollop of sour cream or guacamole. Pairs well with tortilla chips and a fresh salad. Leftovers can be refrigerated for up to 3 days.
