Instructions
- Preheat your grill to medium heat.
- Slice the eggplant into 1/2 inch thick rounds.
- In a bowl, combine the olive oil, salt, black pepper, garlic powder, and balsamic vinegar.
- Brush the olive oil mixture generously onto both sides of the eggplant slices.
- Place the eggplant slices on the grill and cook for about 4-5 minutes on each side.
- Remove the eggplant from the grill and garnish with fresh herbs before serving.
