Ingredients

  • 1 tablespoon balsamic vinegar

Instructions

  1. Preheat your grill to medium heat.
  2. Slice the eggplant into 1/2 inch thick rounds.
  3. In a bowl, combine the olive oil, salt, black pepper, garlic powder, and balsamic vinegar.
  4. Brush the olive oil mixture generously onto both sides of the eggplant slices.
  5. Place the eggplant slices on the grill and cook for about 4-5 minutes on each side.
  6. Remove the eggplant from the grill and garnish with fresh herbs before serving.
