Description

A refreshing seafood dish with succulent shrimp marinated in coconut milk and zesty lime, perfect for summer barbecues and weeknight dinners.

Ingredients

Scale
  • 1 cup coconut milk
  • 1/4 cup lime juice
  • 1 tablespoon lime zest
  • 1 tablespoon honey
  • 2 tablespoons olive oil
  • 3 cloves minced garlic
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 pound peeled and deveined shrimp
  • Lime wedges (for serving)

Instructions

  1. In a bowl, combine coconut milk, lime juice, lime zest, honey, olive oil, minced garlic, salt, and pepper to create the marinade.
  2. Add the shrimp to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes.
  3. Preheat your grill to medium-high heat. Thread the marinated shrimp onto skewers.
  4. Grill the shrimp for 2-3 minutes on each side until cooked through and slightly charred. Serve with lime wedges.

Notes

For best flavor, marinate the shrimp longer if time allows. Use soaked wooden skewers to prevent burning, and do not overcrowd skewers for even cooking.
