Description

Healthy and delicious muffins made with Greek yogurt and ripe bananas, perfect for breakfast or a snack.


Ingredients

  • 1 cup Greek yogurt
  • 3 ripe bananas, mashed
  • 1/4 cup honey or maple syrup
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups whole wheat flour
  • 1/2 teaspoon cinnamon (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, mix together the Greek yogurt, mashed bananas, honey (or maple syrup), eggs, and vanilla extract until well combined.
  3. Add the baking soda, salt, and cinnamon (if using) to the mixture and stir.
  4. Gradually incorporate the whole wheat flour until just combined; do not overmix.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the muffins cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.

Notes

These muffins can be served with almond butter or cream cheese for an extra treat.
