Description

A refreshing salad bursting with Mediterranean flavors, perfect for gatherings or a healthy lunch.


Ingredients

  • 1 cup orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red onion, finely chopped
  • 1 bell pepper, diced
  • 1/2 cup kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the orzo according to package instructions; drain and let cool.
  2. In a large bowl, combine the cooked orzo, cherry tomatoes, cucumber, red onion, bell pepper, olives, feta cheese, and fresh parsley. Stir gently.
  3. In a separate bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  4. Pour the dressing over the salad and toss to combine. Refrigerate for at least 30 minutes before serving.
