Ingredients

- 1 cup orzo pasta
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 red onion, finely chopped
- 1 bell pepper, diced
- 1/2 cup kalamata olives, pitted and sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Cook the orzo according to package instructions; drain and let cool.
- In a large bowl, combine the cooked orzo, cherry tomatoes, cucumber, red onion, bell pepper, olives, feta cheese, and fresh parsley. Stir gently.
- In a separate bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss to combine. Refrigerate for at least 30 minutes before serving.
