- 2 cups cooked chicken, shredded
- 1 cup cucumber, grated and drained
- 1 cup Greek yogurt
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 2 tablespoons fresh dill, chopped
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Lettuce leaves for serving
Instructions
- Begin by preparing all the ingredients. Grate the cucumber and make sure to drain it well to avoid excess moisture.
- In a large bowl, combine the shredded chicken, drained grated cucumber, Greek yogurt, olive oil, minced garlic, chopped dill, lemon juice, salt, and pepper.
- Use a spatula or large spoon to mix everything together until well combined.
- Once fully mixed, taste and adjust the seasoning if desired. Serve the chicken salad on a bed of fresh lettuce leaves.
