Ingredients

  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips (for filling)
  • Powdered sugar (for dusting, optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together gluten-free flour, cocoa powder, and salt.
  3. Cream together butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla until well blended.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until well combined into a soft dough.
  5. Scoop tablespoon-sized portions of dough and roll them into balls. Place on the baking sheet, spaced 2 inches apart. Create an indent in the center of each ball.
  6. Bake for 10-12 minutes. Once cooked, remove and allow to cool slightly.
  7. While warm, fill indents with chocolate chips, allowing them to melt. Let cookies cool completely on a wire rack, dust with powdered sugar if desired.

Notes

Ensure gluten-free flour includes xanthan gum. Consider adding espresso powder for a richer flavor.
