- 1/2 cup unsweetened cocoa powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips (for filling)
- Powdered sugar (for dusting, optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, whisk together gluten-free flour, cocoa powder, and salt.
- Cream together butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla until well blended.
- Gradually add the dry ingredients to the wet ingredients, mixing until well combined into a soft dough.
- Scoop tablespoon-sized portions of dough and roll them into balls. Place on the baking sheet, spaced 2 inches apart. Create an indent in the center of each ball.
- Bake for 10-12 minutes. Once cooked, remove and allow to cool slightly.
- While warm, fill indents with chocolate chips, allowing them to melt. Let cookies cool completely on a wire rack, dust with powdered sugar if desired.
Notes
Ensure gluten-free flour includes xanthan gum. Consider adding espresso powder for a richer flavor.
