Description

A moist and delicious gluten-free banana bread that is packed with flavor and easy to make.


Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup melted coconut oil
  • 1/2 cup sugar or honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 2 eggs
  • 1 1/2 cups gluten-free all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. Mash the ripe bananas in a bowl until smooth and mix in the melted coconut oil, sugar (or honey), vanilla extract, and eggs until fully combined.
  3. In another bowl, whisk together the gluten-free flour, baking soda, and salt, then gradually add to the wet mixture and stir until just combined.
  4. Pour the batter into the prepared loaf pan and smooth the top, then bake for 50-60 minutes or until a toothpick inserted into the center comes out clean. Allow to cool before transferring to a wire rack.

Notes

For best results, use overripe bananas and be careful not to overmix the batter.
