- 3 ripe bananas, mashed
- 1/3 cup melted coconut oil
- 1/2 cup sugar or honey
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- Pinch of salt
- 2 eggs
- 1 1/2 cups gluten-free all-purpose flour
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- Mash the ripe bananas in a bowl until smooth and mix in the melted coconut oil, sugar (or honey), vanilla extract, and eggs until fully combined.
- In another bowl, whisk together the gluten-free flour, baking soda, and salt, then gradually add to the wet mixture and stir until just combined.
- Pour the batter into the prepared loaf pan and smooth the top, then bake for 50-60 minutes or until a toothpick inserted into the center comes out clean. Allow to cool before transferring to a wire rack.
Notes
For best results, use overripe bananas and be careful not to overmix the batter.
