  • 2 eggs
  • 1/4 cup melted coconut oil (or butter)
  • 1/2 cup honey (or maple syrup)
  • 1 teaspoon vanilla extract
  • 1 1/2 cups gluten-free flour blend
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan with butter or coconut oil.
  2. In a large mixing bowl, combine the mashed bananas, eggs, melted coconut oil, honey, and vanilla extract. Mix until smooth.
  3. In a separate bowl, mix together the gluten-free flour blend, baking soda, salt, and cinnamon.
  4. Gradually add the dry mixture to the wet banana mixture, stirring gently until just combined.
  5. Pour the batter into the prepared loaf pan, smoothing the top. Bake for 50-60 minutes, or until a toothpick comes out clean.
  6. Let cool in the pan for a few minutes before transferring to a wire rack to cool completely.
