- 3 ripe bananas, mashed
- 2 eggs
- 1/4 cup melted coconut oil (or butter)

- 1 teaspoon vanilla extract
- 1 1/2 cups gluten-free flour blend

- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan with butter or coconut oil.
- In a large mixing bowl, combine the mashed bananas, eggs, melted coconut oil, honey, and vanilla extract. Mix until smooth.
- In a separate bowl, mix together the gluten-free flour blend, baking soda, salt, and cinnamon.
- Gradually add the dry mixture to the wet banana mixture, stirring gently until just combined.
- Pour the batter into the prepared loaf pan, smoothing the top. Bake for 50-60 minutes, or until a toothpick comes out clean.
- Let cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Notes
For added texture and flavor, consider mixing in nuts or gluten-free chocolate chips. Store in an airtight container for up to 2 days or freeze for longer storage.
