Instructions
- Preheat the oven to 350°F (175°C) and grease a jelly roll pan.
- Whisk together flour, baking powder, ground ginger, ground cinnamon, ground cloves, and salt.
- Beat eggs and sugar until light and fluffy, then mix in cocoa powder, molasses, and vegetable oil.
- Fold dry ingredients into wet mixture until just combined.
- Pour batter into the prepared pan and bake for 15-20 minutes or until a toothpick comes out clean.
- Roll the warm cake in a damp kitchen towel to cool.
- Whip the heavy cream with powdered sugar and vanilla until soft peaks form.
- Unroll the cooled cake, spread whipped cream, and re-roll tightly.
- Decorate with icing or holiday toppings and serve.
Notes
For a less sweet filling, reduce the powdered sugar in the whipped cream. Make sure eggs are at room temperature for better incorporation.
