  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup molasses
  • 1/4 cup vegetable oil
  • 1 cup heavy cream
  • 1 tablespoon powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a jelly roll pan.
  2. Whisk together flour, baking powder, ground ginger, ground cinnamon, ground cloves, and salt.
  3. Beat eggs and sugar until light and fluffy, then mix in cocoa powder, molasses, and vegetable oil.
  4. Fold dry ingredients into wet mixture until just combined.
  5. Pour batter into the prepared pan and bake for 15-20 minutes or until a toothpick comes out clean.
  6. Roll the warm cake in a damp kitchen towel to cool.
  7. Whip the heavy cream with powdered sugar and vanilla until soft peaks form.
  8. Unroll the cooled cake, spread whipped cream, and re-roll tightly.
  9. Decorate with icing or holiday toppings and serve.

Notes

For a less sweet filling, reduce the powdered sugar in the whipped cream. Make sure eggs are at room temperature for better incorporation.
