- 1 cup gingerbread cookie crumbs
- 2 tablespoons melted butter
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 cup whipped cream
Instructions
- Preheat the oven to 350°F (175°C). In a bowl, combine the gingerbread cookie crumbs and melted butter. Press the mixture into the bottom of serving cups to form a crust.
- In another bowl, beat the cream cheese with an electric mixer until smooth. Gradually add the powdered sugar, vanilla extract, ground ginger, ground cinnamon, and ground nutmeg, mixing until well combined.
- Gently fold in the whipped cream until the mixture is smooth and creamy.
- Spoon the cheesecake filling into the crusted cups and smooth the tops. Refrigerate for at least 2 hours before serving.
Notes
For an added touch, top with additional whipped cream and a sprinkle of gingerbread spice before serving. Can be stored in the refrigerator for up to 3 days.
