  • 1 pound large raw prawns, peeled and deveined
  • 2 cups cooked white rice
  • 4 cloves garlic, finely minced
  • 1 small shallot, diced
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon crushed red pepper flakes
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh cilantro
  • 1 tablespoon chopped fresh chives
  • 1 medium lemon, cut into wedges

Instructions

  1. Pat the prawns dry and season with half of the salt and black pepper.
  2. Heat olive oil and butter in a large skillet over medium-high heat, then add the minced garlic and diced shallot; stir for 1-2 minutes.
  3. Add the seasoned prawns in a single layer and sprinkle with remaining salt, black pepper, and red pepper flakes; sauté for 2 minutes per side until cooked through.
  4. Add the cooked rice to the skillet, toss to combine, then remove from heat and sprinkle with chopped herbs. Serve garnished with lemon wedges.
