- 1.5 pounds baby Yukon Gold potatoes
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/3 cup grated Parmesan cheese
- 1 teaspoon dried Italian herbs
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon chopped fresh parsley (optional)
Instructions
- Wash and dry the potatoes. If needed, cut them in half or quarters for even cooking.
- In a large bowl, toss the potatoes with the olive oil, minced garlic, salt, black pepper, and Italian herbs until well coated.
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and arrange the potatoes cut-side down.
- Roast the potatoes for 25–30 minutes, or until golden and crispy. Once removed from the oven, sprinkle with reserved Parmesan cheese and fresh parsley. Serve immediately.

Choose evenly sized potatoes for even cooking. Adjust garlic levels according to preference and consider adding a splash of lemon juice before serving.
