Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, combine the minced garlic, lemon juice, lemon zest, olive oil, oregano, salt, and pepper. Whisk together until well blended.
- Place the chicken thighs in a baking dish and pour the marinade over them, ensuring they are well coated.
- Arrange the marinated chicken thighs skin side up in the baking dish. Bake for 35-40 minutes, until the skin is golden brown and the internal temperature reaches 165°F (75°C).
- Garnish with fresh parsley if desired, and serve.
Notes
For a spicier version, add red pepper flakes to the marinade. Marinating overnight enhances flavor.
