- 1 pound wild caught large shrimp (peeled and deveined)
- 4 tablespoons extra virgin olive oil
- 4 cloves garlic (pressed or minced)
- 1 teaspoon kosher salt
- 1/2 teaspoon red pepper flakes
- 4 tablespoons butter
- 1/3 cup white grape juice or chicken stock
- 2 tablespoons fresh lemon juice
- 1 tablespoon minced parsley
Instructions
- Thaw shrimp in cool water, then peel and devein. Rinse and place in a bowl.
- Marinate shrimp with olive oil, half the garlic, salt, and red pepper flakes for about 20 minutes.
- Heat remaining olive oil in a large skillet over medium heat. Cook the marinated shrimp for about 1 to 1.5 minutes per side until opaque; remove from skillet.
- Melt butter in the same skillet, sauté the remaining garlic until fragrant. Add white grape juice and lemon juice; cook until slightly thickened. Return shrimp to the skillet, add any juices released, stir in remaining butter, adjust seasoning, and toss with parsley before serving.
Notes
Serve with crusty garlic bread, over linguine, or alongside a fresh green salad. Store leftovers in the refrigerator for up to 2 days.
