- 2 chicken breasts
- 3 tablespoons garlic butter
- 1 cup sweet corn (fresh or frozen)
- 2 medium zucchinis, sliced
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Heat a skillet over medium heat and add the garlic butter, allowing it to melt and become bubbly.
- Season the chicken breasts generously with salt and pepper, then place them in the skillet. Cook for about 5-7 minutes on each side, until golden.
- Remove the chicken from the skillet and set it aside. Add the sliced zucchini and corn and cook for about 5 minutes until tender.
- Return the chicken to the skillet and toss everything together until heated through, about 2 minutes. Garnish with fresh parsley, if desired.
Notes
This dish is excellent on its own or with light sides like a salad or crusty bread. Leftovers can be stored in an airtight container for 3-4 days in the refrigerator.
