Description

A delicious and simple dish combining garlic butter with chicken, zucchini, and corn, perfect for a quick weeknight dinner.


Ingredients

  • 2 chicken breasts
  • 3 tablespoons garlic butter
  • 1 cup sweet corn (fresh or frozen)
  • 2 medium zucchinis, sliced
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat a skillet over medium heat and add the garlic butter, allowing it to melt and become bubbly.
  2. Season the chicken breasts generously with salt and pepper, then place them in the skillet. Cook for about 5-7 minutes on each side, until golden.
  3. Remove the chicken from the skillet and set it aside. Add the sliced zucchini and corn and cook for about 5 minutes until tender.
  4. Return the chicken to the skillet and toss everything together until heated through, about 2 minutes. Garnish with fresh parsley, if desired.

Notes

This dish is excellent on its own or with light sides like a salad or crusty bread. Leftovers can be stored in an airtight container for 3-4 days in the refrigerator.
