Fruit Caramels are delightful treats that combine the sweetness of fruit with rich, buttery homemade caramel, perfect for gifting or dessert tables.
Ingredients

- 1 cup fruit puree
- 1 ½ cups granulated sugar
- ½ cup light corn syrup
- 6 tablespoons unsalted butter
- ½ cup heavy cream
- ¼ teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Line an 8×8-inch square pan with parchment paper and lightly grease it.
- In a saucepan, combine fruit puree, sugar, corn syrup, butter, and salt over medium heat, stirring until boiling.
- Insert a candy thermometer and cook until it reaches 240°F, stirring occasionally.
- Slowly add heavy cream while stirring. Cook again until it reaches 240°F, then remove from heat and stir in vanilla.
- Pour the mixture into the prepared pan and let it cool for 2-3 hours until set.
- Once cooled, lift the caramels out, cut into pieces, and wrap individually in wax paper.
Notes
Use fresh, high-quality fruit for the puree and experiment with different flavors.
