Description

Fruit Caramels are delightful treats that combine the sweetness of fruit with rich, buttery homemade caramel, perfect for gifting or dessert tables.


Ingredients

  • 1 cup fruit puree
  • 1 ½ cups granulated sugar
  • ½ cup light corn syrup
  • 6 tablespoons unsalted butter
  • ½ cup heavy cream
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Line an 8×8-inch square pan with parchment paper and lightly grease it.
  2. In a saucepan, combine fruit puree, sugar, corn syrup, butter, and salt over medium heat, stirring until boiling.
  3. Insert a candy thermometer and cook until it reaches 240°F, stirring occasionally.
  4. Slowly add heavy cream while stirring. Cook again until it reaches 240°F, then remove from heat and stir in vanilla.
  5. Pour the mixture into the prepared pan and let it cool for 2-3 hours until set.
  6. Once cooled, lift the caramels out, cut into pieces, and wrap individually in wax paper.

Use fresh, high-quality fruit for the puree and experiment with different flavors.
