Delightful mini focaccia bread that is soft, pillowy, and infused with herbs, perfect for snacking or as a side dish.
Ingredients

- 2 cups warm water
- 1 tablespoon sugar
- 1 packet (2 1/4 teaspoons) yeast
- 4 cups all-purpose flour
- 2 teaspoons salt
- 1/4 cup olive oil, plus more for topping
- Fresh herbs (such as rosemary or thyme)
- Coarse sea salt for topping
Instructions
- In a bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy.
- In a large mixing bowl, combine flour and salt. Make a well in the center, add the yeast mixture and olive oil, and stir until a dough forms.
- Knead the dough for about 5-7 minutes until smooth.
- Cover the bowl with a towel and let it rise in a warm place for about 1 hour or until doubled in size.
- Preheat the oven to 425°F (220°C).
- Punch down the dough and divide it into small pieces. Shape each piece into a mini focaccia.
- Place them on a baking sheet lined with parchment paper.
- Use your fingers to make dimples in each focaccia.
- Drizzle with olive oil, sprinkle with fresh herbs and coarse sea salt.
- Bake for about 15-20 minutes or until golden brown.
- Let cool slightly before serving.
Notes
Serve with a dipping oil or balsamic vinegar. Store in an airtight container for up to 3 days or freeze for up to 3 months.
