Description

Delightful mini focaccia bread that is soft, pillowy, and infused with herbs, perfect for snacking or as a side dish.


Ingredients

  • 2 cups warm water
  • 1 tablespoon sugar
  • 1 packet (2 1/4 teaspoons) yeast
  • 4 cups all-purpose flour
  • 2 teaspoons salt
  • 1/4 cup olive oil, plus more for topping
  • Fresh herbs (such as rosemary or thyme)
  • Coarse sea salt for topping

Instructions

  1. In a bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy.
  2. In a large mixing bowl, combine flour and salt. Make a well in the center, add the yeast mixture and olive oil, and stir until a dough forms.
  3. Knead the dough for about 5-7 minutes until smooth.
  4. Cover the bowl with a towel and let it rise in a warm place for about 1 hour or until doubled in size.
  5. Preheat the oven to 425°F (220°C).
  6. Punch down the dough and divide it into small pieces. Shape each piece into a mini focaccia.
  7. Place them on a baking sheet lined with parchment paper.
  8. Use your fingers to make dimples in each focaccia.
  9. Drizzle with olive oil, sprinkle with fresh herbs and coarse sea salt.
  10. Bake for about 15-20 minutes or until golden brown.
  11. Let cool slightly before serving.

Notes

Serve with a dipping oil or balsamic vinegar. Store in an airtight container for up to 3 days or freeze for up to 3 months.
