Description

Light and airy crepes made primarily with egg whites, perfect for brunch or a light dessert.


Ingredients

  • 4 egg whites
  • 1/4 cup milk
  • 1/2 cup all-purpose flour
  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • Cooking spray or butter
  • Fruits or yogurt for filling

Instructions

  1. In a mixing bowl, whisk together the egg whites, milk, flour, sugar, and salt until smooth.
  2. Heat a non-stick skillet over medium heat and lightly grease with cooking spray or butter.
  3. Pour a small amount of the crepe batter into the skillet, tilting it to spread the batter evenly.
  4. Carefully flip the crepe and cook for an additional minute. Remove and repeat with remaining batter.
  5. Fill each crepe with fruits or yogurt and serve warm.

Notes

For fluffier crepes, whip the egg whites separately before mixing. Store leftovers in an airtight container for up to 2 days or freeze for a month.
