Light and airy crepes made primarily with egg whites, perfect for brunch or a light dessert.
Ingredients

- 4 egg whites
- 1/4 cup milk
- 1/2 cup all-purpose flour
- 1 tablespoon sugar
- 1/4 teaspoon salt
- Cooking spray or butter
- Fruits or yogurt for filling
Instructions
- In a mixing bowl, whisk together the egg whites, milk, flour, sugar, and salt until smooth.
- Heat a non-stick skillet over medium heat and lightly grease with cooking spray or butter.
- Pour a small amount of the crepe batter into the skillet, tilting it to spread the batter evenly.
- Carefully flip the crepe and cook for an additional minute. Remove and repeat with remaining batter.
- Fill each crepe with fruits or yogurt and serve warm.
Notes
For fluffier crepes, whip the egg whites separately before mixing. Store leftovers in an airtight container for up to 2 days or freeze for a month.
