Ingredients

  • 2 cups cooked and mashed sweet potatoes
  • 1/2 cup almond flour
  • 1/2 cup coconut sugar
  • 1/4 cup melted coconut oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 teaspoons ground ginger
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8-inch round cake pan.
  2. In a large bowl, combine the cooked sweet potatoes, almond flour, coconut sugar, melted coconut oil, eggs, and vanilla extract. Stir together until fully incorporated.
  3. Add the ground ginger, baking powder, cinnamon, and salt. Mix thoroughly until the batter is smooth.
  4. Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake for 30-35 minutes, or until a toothpick inserted comes out clean.
  5. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
