- 8 oz rigatoni pasta
- 1 cup feta cheese, crumbled
- 1/2 cup dried cranberries
- 1/4 cup red onion, diced
- 1/2 cup bell pepper, diced
- 1/4 cup olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the rigatoni pasta according to package directions until al dente. Drain and let cool.
- In a large bowl, combine the cooked rigatoni, feta cheese, dried cranberries, red onion, and bell pepper.
- In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
- Pour the dressing over the pasta salad and toss gently to combine.
