Ingredients

  • 1 onion, diced
  • 2 fennel bulbs, diced
  • 2 apples, peeled and diced
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Fresh herbs (like thyme or parsley) for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the diced onion and fennel, sautéing until softened, about 5-7 minutes.
  2. Stir in the diced apples and cook for another 3 minutes.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer for about 20 minutes.
  4. Use an immersion blender to puree the soup until smooth. Season with salt and pepper to taste and serve warm.
