Delightful gingerbread-flavored waffles stacked high with whipped cream and maple syrup, perfect for a warm breakfast or brunch.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 2 large eggs
  • 1 3/4 cups milk
  • 1/3 cup molasses
  • 1/4 cup brown sugar
  • 1/4 cup unsalted butter, melted and cooled
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • Maple syrup, for serving

Instructions

  1. Preheat the waffle iron according to the manufacturer’s instructions.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, ginger, cinnamon, nutmeg, and cloves.
  3. In a separate bowl, whisk together the eggs, milk, molasses, brown sugar, melted butter, and vanilla extract.
  4. Pour the wet mixture into the dry ingredients and gently stir until just combined, leaving some lumps.
  5. Lightly grease the waffle iron, pour enough batter to cover the surface, and cook until golden brown.
  6. Whip the heavy cream with powdered sugar and vanilla until soft peaks form.
  7. Layer waffles with whipped cream and drizzle with maple syrup before serving.

Notes

For crispier waffles, let the batter sit for 5 minutes before cooking. You can prepare dry ingredients in advance for a quick breakfast solution.
