Description

Ingredients

  • 1 lb ground beef
  • 4 cups coleslaw mix (cabbage and carrots)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 green onions, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste

Instructions

  1. Heat the sesame oil in a large skillet over medium heat.
  2. Add the ground beef, breaking it apart with a spatula, and cook until browned.
  3. Stir in the minced garlic and ginger, cooking for another minute until fragrant.
  4. Add the coleslaw mix and soy sauce, cooking until the veggies are tender-crisp, about 5 minutes.
  5. Season with salt and pepper to taste.
  6. Top with sliced green onions and serve hot.

Notes

For a vegetarian version, replace the ground beef with tofu or tempeh. Can be served over rice or quinoa for a heartier meal.
