Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 zucchini, diced
- 1 bell pepper, chopped
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the onion, carrots, and celery, and sauté until softened, about 5-7 minutes.
- Stir in the garlic, zucchini, and bell pepper, and cook for an additional 3-4 minutes.
- Pour in the vegetable broth and diced tomatoes. Add basil, oregano, salt, and pepper. Bring to a boil, then reduce heat and simmer for about 20-25 minutes.
- Adjust seasoning if needed and serve hot, garnished with fresh parsley.
Notes
Mix and match vegetables based on what you have; sweet potatoes, green beans, or spinach make excellent additions.
