Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 zucchini, diced
  • 1 bell pepper, chopped
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the onion, carrots, and celery, and sauté until softened, about 5-7 minutes.
  3. Stir in the garlic, zucchini, and bell pepper, and cook for an additional 3-4 minutes.
  4. Pour in the vegetable broth and diced tomatoes. Add basil, oregano, salt, and pepper. Bring to a boil, then reduce heat and simmer for about 20-25 minutes.
  5. Adjust seasoning if needed and serve hot, garnished with fresh parsley.

Notes

Mix and match vegetables based on what you have; sweet potatoes, green beans, or spinach make excellent additions.
