A unique twist on traditional stuffing, these savory muffins combine all the comforting flavors of Thanksgiving stuffing into a portable and adorable format.


Ingredients

  • 4 cups bread cubes
  • 1 cup vegetable broth
  • 1/2 cup onion, diced
  • 1/2 cup celery, diced
  • 1/4 cup butter, melted
  • 1 teaspoon dried sage
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin to prevent sticking.
  2. In a large bowl, combine the bread cubes, diced onion, celery, dried sage, dried thyme, salt, and black pepper. Stir gently to mix all ingredients together evenly.
  3. In a separate bowl, whisk together the vegetable broth, melted butter, and eggs until well combined.
  4. Pour the wet ingredients over the dry bread mixture. Gently toss everything together until the bread is moistened. Spoon the stuffing mixture into the prepared muffin tin, filling each cup about 2/3 full.
  5. Bake for 20-25 minutes or until the muffins turn golden brown on top. Let them cool slightly before removing them from the tin.

Notes

These stuffing muffins can be served as a side dish or appetizer and can be customized with different herbs or add-ins. For an egg-free version, substitute eggs with flaxseed meal mixed with water.
