Delightful and nutritious pancakes made with sweet potatoes, perfect for breakfast.


Ingredients

  • 1 cup mashed sweet potatoes
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon

Instructions

  1. In a large bowl, mix together the mashed sweet potatoes, milk, egg, melted butter, and vanilla extract until smooth.
  2. In another bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
  3. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  4. Heat a non-stick skillet over medium heat and lightly grease. Pour about 1/4 cup of batter for each pancake onto the skillet, cooking until bubbles form, then flipping and cooking until golden brown.
  5. Serve warm with toppings of your choice.

Notes

Serve with maple syrup, yogurt, or fresh fruit. Can be stored in the refrigerator for 3-4 days or frozen for up to 2 months.
