A simple yet satisfying dish combining fresh spinach, creamy cheeses, and eggs, perfect for a hearty meal.


Ingredients

  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 3 eggs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup breadcrumbs
  • Olive oil for greasing

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a casserole dish with olive oil.
  2. In a large bowl, mix together the chopped spinach, ricotta cheese, mozzarella cheese, Parmesan cheese, eggs, garlic powder, salt, and pepper until well combined.
  3. Pour the mixture into the prepared casserole dish and spread it evenly. Sprinkle the breadcrumbs on top.
  4. Bake in the preheated oven for 25-30 minutes or until the top is golden brown and the casserole is set. Allow to cool slightly before serving.

Notes

Squeeze out excess moisture from the spinach to prevent a watery casserole. Can be made in advance or frozen.
